Banana Bread Swirl

This banana bread is Amazing - and should really be called a cake instead of bread!

Ingredients
- (3) Bananas
- (2) Eggs
- (2 Tbsp) Maple Syrup
- (2 C) Almond Flour
- (1/3 C) Tapioca Flour
- (1 1/2 tsp) Baking Powder
- (1/2 tsp) Sea Salt
- FOR THE TOPPING
- (1/2 C) Almond Flour
- (1 C) Pecans, walnuts, ext.
- (4 Tbsp) Coconut Oil
- (1/2 C) Coconut Sugar
- (1 tsp) Sea Salt
- (2 Tbsp) Cinammon
Directions
- Preheat oven to 350. Line a 9x5 loaf pan with Parchment paper
- Add bananas, eggs, maple syrup, 2 C almond flour, tapioca flour, baking powder, and sea salt to mixer.
- In separate bowl, combine 4 TBSP melted coconut oil, 1/2 c almond flour, coconut sugar, 2 tbsp cinammon, a dash of salt and one cup of chopped nuts. Combine well.
- Time to layer! Get your baking dish and pour in half of the batter. Sprinkle half the cinnamon nut mixture on top of this. Add the remaining batter and smooth and finish off with the remaining cinnamon nut mixture.
- Place in oven and bake for 45 - 1 hour. Allow to cool one hour before cutting.
