Zucchini Brownies
Need a healthy chocolate fix? Look no further than this recipe! When the garden is producing zucchini like crazy and you're trying to come up with all the ways to use it - you have to try this. It will become a staple and you'll keep it close.

Ingredients

  • (2) ERF EGGS
  • (1/2 cup) Maple Syrup
  • (1/2 cup) Coconut oil
  • (1 Cup) Almond Butter
  • (1 tsp) Vanilla
  • (1/4 tsp) Baking Soda
  • (1/4 tsp) Salt
  • (2/3 Cup) Cocoa Powder
  • (1 Cup finely shredded & squeezed) Zucchini
  • (1/2 cup) Chocolate chips

Directions

  1. preheat oven to 350 degrees
  2. shred zucchini then take a paper towel, cheesecloth or just using your hands squeeze out the liquid. You don’t want spongy brownies! Set aside. 
  3. Mix together eggs, maple syrup, melted coconut oil, almond butter and vanilla. 
  4. In a separate bowl, mix almond flour, baking soda, salt and cocoa powder. 
  5. Add dry ingredients to wet. 
  6. Mix in shredded zucchini and chocolate chips. 
  7. Pour into 8x8 baking pan lined with parchment paper. 
  8. Bake for 25-30 min until a toothpick comes out clean.
