When the garden is producing zucchini like crazy and you're trying to come up with all the ways to use it - you have to try this. It will become a staple and you'll keep it close.

Ingredients
- (2) ERF EGGS
- (1/2 cup) Maple Syrup
- (1/2 cup) Coconut oil
- (1 Cup) Almond Butter
- (1 tsp) Vanilla
- (1/4 tsp) Baking Soda
- (1/4 tsp) Salt
- (2/3 Cup) Cocoa Powder
- (1 Cup finely shredded & squeezed) Zucchini
- (1/2 cup) Chocolate chips
Directions
- preheat oven to 350 degrees
- shred zucchini then take a paper towel, cheesecloth or just using your hands squeeze out the liquid. You don’t want spongy brownies! Set aside.
- Mix together eggs, maple syrup, melted coconut oil, almond butter and vanilla.
- In a separate bowl, mix almond flour, baking soda, salt and cocoa powder.
- Add dry ingredients to wet.
- Mix in shredded zucchini and chocolate chips.
- Pour into 8x8 baking pan lined with parchment paper.
- Bake for 25-30 min until a toothpick comes out clean.
