Delectable Buttermilk Cake

This moist, delicious buttermilk cake is sure to hit the spot. A simple recipe with a taste that will take you back to sitting at your mamaw's table eating her fresh cooked cake.

Ingredients
- (2 3/4 C) All Purpose Flour
- (2 Cups) Sugar
- (1 tsp) salt
- (2 tsp) Baking Powder
- (1/2 tsp) Baking Soda
- (1 1/2 Cups) Buttermilk
- (3 Large Whole) Eggs
- (1) Egg Yolk
- (2 tsp) Vanilla
- (2 TBSP) Coconut Oil
- (1 Cup) Butter
- FOR THE GLAZE
- (1/2 C) Butter
- (1/4 Cup) Brown Sugar
- (1 tsp) Vanilla
- (1/4 Cup) Buttermilk
- (2 Cups plus more for dusting) Confectioner's Sugar
Directions
- Preheat the Oven to 325 Degrees and prepare a 9x13 by greasing it (I use butter). Allow butter to reach room temperature.
- In a large bowl combine flour, sugar, salt, baking powder, baking soda. Mix and set aside.
- In a new bowl, mix the buttermilk, whole eggs, egg yolk, vanilla, and melted coconut oil. Whisk well.
- Cut the room temperature butter up into pieces. Add the butter pieces slowly as you mix into the flour mixture. Once all the butter is added, mix until you get a crumbly texture.
- Add in half the liquid buttermilk mixture. Mix until incorporated then add the last half of the buttermilk mixture.
- Only mix for about 10 seconds - mixing too long will result in a dense cake.
- Pour batter into prepared pan and bake for 45min - 1 hour. (Cake is done when toothpick comes out without raw batter on it)
- Allow cake to cool for 15 min while you prepare the glaze.
- FOR THE GLAZE: Combine room temperature butter, brown sugar, vanilla, and buttermilk. Mix well. Add in Confectioner's Sugar and mix until everything is combined.
- Poke holes in the warm cake.
- Pour Glaze over warm cake and let it soak in for about 30 minutes before cutting. Dust with more confectioner's sugar if desired.
