Delectable Buttermilk Cake
This moist, delicious buttermilk cake is sure to hit the spot. A simple recipe with a taste that will take you back to sitting at your mamaw's table eating her fresh cooked cake.

Ingredients

  • (2 3/4 C) All Purpose Flour
  • (2 Cups) Sugar
  • (1 tsp) salt
  • (2 tsp) Baking Powder
  • (1/2 tsp) Baking Soda
  • (1 1/2 Cups) Buttermilk
  • (3 Large Whole) Eggs
  • (1) Egg Yolk
  • (2 tsp) Vanilla
  • (2 TBSP) Coconut Oil
  • (1 Cup) Butter
  • FOR THE GLAZE
  • (1/2 C) Butter
  • (1/4 Cup) Brown Sugar
  • (1 tsp) Vanilla
  • (1/4 Cup) Buttermilk
  • (2 Cups plus more for dusting) Confectioner's Sugar

Directions

  1. Preheat the Oven to 325 Degrees and prepare a 9x13 by greasing it (I use butter). Allow butter to reach room temperature.
  2. In a large bowl combine flour, sugar, salt, baking powder, baking soda. Mix and set aside. 
  3. In a new bowl, mix the buttermilk, whole eggs, egg yolk, vanilla, and melted coconut oil. Whisk well.
  4. Cut the room temperature butter up into pieces. Add the butter pieces slowly as you mix into the flour mixture. Once all the butter is added, mix until you get a crumbly texture. 
  5. Add in half the liquid buttermilk mixture. Mix until incorporated then add the last half of the buttermilk mixture. 
  6. Only mix for about 10 seconds - mixing too long will result in a dense cake. 
  7. Pour batter into prepared pan and bake for 45min - 1 hour. (Cake is done when toothpick comes out without raw batter on it)
  8. Allow cake to cool for 15 min while you prepare the glaze.
  9. FOR THE GLAZE: Combine room temperature butter, brown sugar, vanilla, and buttermilk. Mix well. Add in Confectioner's Sugar and mix until everything is combined. 
  10. Poke holes in the warm cake. 
  11. Pour Glaze over warm cake and let it soak in for about 30 minutes before cutting. Dust with more confectioner's sugar if desired.
