Shepherd’s Pie
If I had one word to sum up this recipe it would be this: Savory This is an easy, yet healthy and delicious meal you’ve gotta try! This can easily be halved if you don’t need as much!

Ingredients

  • (2 Pounds) Ground Beef
  • (4 Medium) Carrots
  • (2 Of any color) Bell Pepper
  • (1 small chopped) Onion
  • (2 Cups) Mushrooms
  • (4 cloves) Garlic
  • (3 tsp divided) Chili Powder
  • (1 tsp) Dried Italian Herbs
  • (1 1/2 tsp divided) Sea Salt
  • (1/2 tsp) Black Pepper
  • (6 oz. Can) Tomato Paste
  • (1/2 Cup) Water
  • (4 Large) Sweet Potatoes
  • (2 Tbsp) Coconut Oil

Directions

  1. The first thing you want to do is put your sweet potatoes In the instant pot or your preferred method of cooking them. I use the instant pot on manual for 20 min. You want to cook them until they’re mushy. 
  2. Get the ground beef going on the stove on low while you chop your carrots, onion, garlic, mushrooms and peppers. 
  3. Add vegetables to the ground meat and mix together. Cook on low for about 10-15 min until the carrots are tender and the meat is just done. 
  4. In the meantime, prepare your sauce. Mix together tomato paste, Italian herbs, 2tsp chili powder, 1 tsp salt, 1/2 tsp pepper, and water. 
  5. Once the carrots are soft in your meat mixture, add the sauce you made in step 4. You can turn the stove top off. 
  6. Preheat oven to 375
  7. By now, your potatoes should be cooked. Peel them and add to a blender along with coconut oil and the remaining chili powder and salt. Blend until mixed. 
  8. Pour your meat mixture into a 9x13 casserole dish. Add the sweet potato topping to the top.  Dash with some sea salt and more chili powder if you like
  9. Bake at 375 for 20-25 min. Remove and enjoy!
